Breaded Green Beans and Fresh Lemon Sauce

This very fresh Cassegrain recipe will make you salivate for green beans...


  • 1 box of Cassegrain green beans

  • 2 cups of fine breadcrumbs

  • 1/2 cup of grated Parmesan cheese

  • 2 eggs

  • 1/4 cup of flour

  • 200g of cottage cheese

  • 1 tbsp of 1 lemon juice

  • 2 sprigs of basil

  • A few stalks of chives

  • Olive oil, salt and pepper


  1. Preheat the oven to 210°C / 410°F,

  2. Cover 1 baking sheet with parchment paper, mix the breadcrumbs and Parmesan and beat the eggs in another bowl,

  3. Flour the beans evenly,

  4. Dip the beans a small amount at a time into the beaten eggs, then into the breadcrumbs mixture to coat them well,

  5. Spread onto prepared baking sheets. Spray lightly with oil,

  6. Cook 3/4 min or until the breadcrumbs are lightly browned,

  7. For the sauce : shop the basil and chives, mix the cottage cheese, lemon juice, herbs, season with salt and pepper.
